Check each leaf for small worms or insects and remove them. Discard the fibrous stem. Wash and rinse the greens couple of times in water.
Finely chop the greens along with their stem and keep it ready.
In a pan, heat oil keeping flame medium. When oil is hot, add mustard seeds.
As mustard seeds start crackling, add urad dal, crushed garlic, curry leaves and green chilli.Fry till the dal turns golden.
Now add chopped amaranth greens and tomato.
Mix well. Sprinkle some water, close the lid and allow it to cook for 5 mins keeping the heat medium, till the leaves are a softened.
Now open the lid and add salt and turmeric powder. Mix well.
Add grated coconut and mix well again.
Close the lid and cook for 3 minutes.
Switch off the stove. Amaranth leaves stir fry is ready.
