Quick pasta recipe – pasta with fresh vegetables stir fried in olive oil and with generous mix of egg, milk and parmesan cheese.
We are huge fans of Italian cuisine and Italian gateways are in our next bucket list after our Swiss tour. Pizza, pasta, lasagna gives happy vibes to our food souls. .
Pasta is a regular weekend dish we cook at home. But this evening, as I stepped out of office, I had craving for this cheesy pasta. Though my first thought was to just jump to an Italian restaurant, I thought of being pocket friendly and decided to cook at home. Then I just got in to my favourite super market and bought some fresh broccoli along with good parmijano or parmesan cheese. Cooked this yummy quick pasta and also clicked some photos to share it in my blog.
I ‘m a huge fan of Italian chef David Rocco’s Dolce vita, where he visits Italian country side and beautiful beaches and cooks with easily available ingredients. I have tried to adapt his cooking style with some of my twists in this quick pasta recipe.

Quick pasta recipe
Serves : 3 people
Preparation time: 7 mins
Cook time : 15 mins
2 cups dried pasta of your choice
1 cup broccoli, cut into small pieces
3/4 cup capsicum, cut into small pieces
1/2 cup grated parmesan cheese
1/4 cup milk
5 garlic cloves
3 tbsp + 1tsp olive oil
1 tsp crushed black pepper
salt to taste
Step by step method
1.Take about 1 litre of water and bring it to boil. Also add I tsp of oil and salt. When water comes to boil add pasta and cook for about 9-10 mins until they are cooked. Pasta which I bought came with the instruction to cook it up to 10 mins, you can follow instructions as per your pasta.
2.Meanwhile break 1 egg and whisk it together with 1/4 cup milk, grated parmesan cheese, salt and pepper. Once done keep it aside.
3.As the pasta is still not done, keep the sauté pan in other stove and add 3 tbsp. of olive oil.
4.Once oil is hot ,add garlic and fry it till it turns golden brown.
5.Now add chopped veggies and stir fry for 3 mins in medium flame. We do not have to cook veggies completely, they should be crunchy.
6.Once pasta is cooked, drain the excess water in colander, and immediately transfer it to a pan and add sautéed veggies, whisked egg mix and mix it well. Close the pan.
7.Serve pasta hot with mixed Italian herbs.
1.Once you drain the pasta, immediately mix it with whisked egg and sautéed veggies. The heat of the pasta is enough to cook egg and melt cheese.
2.If you feel pasta is not hot enough then heat pasta in low flame and mix veggies and whisked egg mix for 2 minutes, by continuously mixing it.
3.As cheese already contains salt, use less salt than usual.
4.Spiciness can be varied by adding more crushed pepper.
