Whenever I’m in a mood for a simple meal, that is just rice and saaru / dal, either because of my appetite, less time or just plain laziness ;), it is a chutney that brightens my meal with its different mixture of flavours. So i can tell you that I am a chutney person, just give me a good chutney with my rice and i’m one happy soul.
Being a south indian, I’ve grown with number of coconut included chutney recipes for our meals. And this pudina coconut chutney is one of it.
If you have seen my previous post spicy brinjal curry, you might know that I had used our home grown brinjal for the recipe. I’m very happy to say that this chutney is also made from homegrown organic pudina / mint leaves.
Try this super tasting pudina coconut chutney which goes very well with rice, dosas and idlis.
Pudina coconut chutney recipe | south indian style mint coconut chutney
Serves : 4 people
Preparation time : 5 mins
1/2 cup tightly packed pudina / mint leaves
3/4 cup fresh grated coconut
2 green chili, chopped
5 garlic cloves, chopped
1 inch ginger, chopped
1/4 tsp turmeric powder
marble size tamarind
salt to taste
Step by step method
- Separate mint leaves from their stalks, wash in water and wipe in clean kitchen towel.
- Grind all the above chutney ingredients to smooth paste adding little water at a time to get chutney consistency. I added 1/4 cup water for this chutney in small batches.
- Adjust green chilies to your taste.
- If you do not like the raw smell of mint, saute the leaves in a tsp of oil for a minute and then use it in chutney.
