Summer appetite calls for light food and lots and lots of fluids. Though we must drink enough water to keep our body hydrated, we can also switch to tasty lassi’s and fruit juices.
This beetroot carrot juice is introduced to me by husband. Some years back when he worked in Mumbai, there was a juice stall near his office which served wide variety of fruit and vegetable juices, this being one among them. So this is one such juice which we often prepare at home.

Beetroot carrot juice recipe | how to make beetroot carrot juice
Serves : 1
Preparation time : 15 mins
1 medium size beetroot
2 medium size carrot
3 fresh mint leaves
1/2 inch ginger, chopped
1/2 cup water
ice cubes, as required
Step by step method
1. Wash beetroot and carrot with clean water and pat dry. Peel off the skin and cut it into small pieces. Now take chopped beetroot, carrot, mint leaves and ginger in a blender.
2. Blend it smooth adding 1/2 cup water.
3. Filter the juice.
4. Add ice cubes if you like it chilled. Serve immediately, because fresh juice are best when consumed as and when prepared.
